Preparation steps:

1. Soak 200g chana dal for 4 hours.
2. Drain and blend to a smooth paste with minimal water.
3. Add 1 tsp turmeric, 1 tsp cumin powder, and salt.
4. Heat 2 tbsp oil in a pan.
5. Spread the lentil mixture evenly.
6. Cook until firm, then cool.
7. Cut into diamond shapes.
8. Deep-fry until golden brown; set aside.
9. In another pan, heat 2 tbsp oil.
10. Saute 1 chopped onion until translucent.
11. Add 1 tsp ginger paste, 2 chopped tomatoes, and 1 tsp garam masala.
12. Cook until oil separates.
13. Add 500ml water and bring to a boil.
14. Gently add fried lentil cakes.
15. Simmer for 10 minutes.
16. Garnish with fresh coriander.
