Preparation steps:

1. Rinse 2 cups of sushi rice until the water runs clear.
2. Cook rice in 2.5 cups of water using a rice cooker or on the stove.
3. In a small pan, mix 1/4 cup rice vinegar, 2 tablespoons sugar, and 1 teaspoon salt. Warm until dissolved.
4. Once rice is cooked, gently fold in the vinegar mixture.
5. Drain and rinse 10 pieces of canned aburaage (fried tofu pouches) to remove excess oil.
6. In a new pan, combine 1/4 cup soy sauce, 1/4 cup mirin, 2 tablespoons sugar, and 1 cup dashi stock. Bring to a simmer.
7. Add aburaage and simmer for 15 minutes, then remove and cool.
8. Carefully open each tofu pouch and fill with the seasoned rice.
9. Serve at room temperature or chilled, garnished with sesame seeds.
