Preparation steps:

1. In a large pot, heat 2 tablespoons of olive oil over medium heat.
2. Add 1 chopped onion, 2 chopped carrots, and 2 chopped celery stalks; saute until softened.
3. Add 2 minced garlic cloves, cooking briefly until fragrant.
4. Place 1 whole chicken (about 1.5 kg) in the pot.
5. Add 8 cups of water, 2 bay leaves, and a sprig of thyme.
6. Bring to a simmer; cook for 1.5 hours.
7. Remove chicken, shred meat, and discard bones.
8. Return meat to the pot, add salt and pepper to taste.
9. Stir in 1 tablespoon of lemon juice for brightness.
10. Simmer for 10 minutes; serve hot.
