Preparation steps:

1. Preheat oven to 200°C (400°F).
2. Prick 2 large eggplants with a fork and place on a baking sheet.
3. Roast in the oven for 40-50 minutes, turning occasionally, until skin is charred and flesh is tender.
4. Allow eggplants to cool, then peel off the charred skin.
5. Mash the peeled eggplants in a bowl until smooth.
6. Add 3 tablespoons tahini, 2 minced garlic cloves, juice of 1 lemon, 3 tablespoons olive oil, and salt to taste.
7. Mix thoroughly until well combined.
8. Adjust seasoning as needed.
