Preparation steps:

1. Peel and slice 500g of raw plantains into thin rounds.
2. Heat 2 tablespoons of oil in a pan over medium heat.
3. Add 1 teaspoon mustard seeds; let them splutter.
4. Stir in a handful of curry leaves and 2 dried red chilies.
5. Add plantain slices to the pan; stir well.
6. Sprinkle 1 teaspoon turmeric, 1 teaspoon red chili powder, and salt to taste.
7. Fry until golden and crispy, stirring occasionally.
8. Serve hot, garnished with fresh coriander leaves.
