Preparation steps:

1. Clean artichokes and remove tough outer leaves.
2. Slice artichokes thinly and place in lemon water.
3. Heat olive oil in a skillet over medium heat.
4. Add sliced artichokes to skillet.
5. Saute artichokes until tender.
6. Season with salt and pepper.
7. Beat eggs in a bowl.
8. Add chopped fresh mint to eggs.
9. Pour egg mixture over artichokes in skillet.
10. Cook over low heat until edges set.
11. Preheat broiler.
12. Place skillet under broiler.
13. Broil until top is golden and set.
