Preparation steps:

1. In a medium saucepan, heat 2 cups (500ml) of whole milk and 1 cup (250ml) of heavy cream until warm, but not boiling.
2. In a separate bowl, whisk 6 large egg yolks with 150g (3/4 cup) of granulated sugar until pale and thick.
3. Gradually pour the warm milk mixture into the egg yolks, whisking constantly.
4. Return the mixture to the saucepan and cook over low heat, stirring constantly until it thickens slightly to coat the back of a spoon.
5. Remove from heat; stir in 1 tablespoon of pure vanilla extract.
6. Strain the mixture through a fine sieve into a bowl to remove any lumps.
7. Cool completely, then cover and chill in the refrigerator for at least 4 hours.
8. Churn in an ice cream maker according to the manufacturer's instructions until creamy.
9. Transfer to a lidded container and freeze until firm, about 2-3 hours.
