Preparation steps:

1. Soak 1 cup of rice and 1/3 cup of urad dal separately for 4-6 hours.
2. Grind them separately, then mix, adding salt and water to form a smooth batter. Ferment overnight.
3. Boil 2 medium potatoes, then mash.
4. In a pan, heat 2 tablespoons of oil. Add 1 teaspoon mustard seeds, 1 chopped onion, and saute.
5. Add 1 teaspoon turmeric, mashed potatoes, and salt. Cook until blended.
6. Heat a non-stick pan, pour a ladle of batter, and spread thinly.
7. Drizzle oil, cook until crisp and golden.
8. Place potato filling inside, fold, and serve hot.
